The Perfect Summer Pasta Dish & Today's School Lunches

Good evening!
What a beautiful day!

I worked today, and I didn't take my green drink with me.  Boy, was I feeling it!  The number of vitamins, minerals, and nutrients in our drinks are crazy, and my body was seriously lamenting my laziness in not bringing it with.  I was/am so tired.  So tired, in fact, that I ended up with a pounding headache, and had to take a nap.  I definitely need an energy boost, so I'm enjoying my drink as I write this.  

We have been drinking nearly this same combination for almost a year.  There were days that we would go without it, but that hasn't happened in quite awhile.  We haven't skipped a single day in at least 5 months!  

Oh, I nearly forgot!  Here is what my kiddos took for lunch today...


Organic blue corn tortilla chips, 1/2 an organic pear, organic yogurt w/ homemade berry sauce, black chia seeds, and homemade organic granola to stir in, & homemade black beans w/ shredded yellow bell pepper.


I wanted to share yesterday's at home lunch with you.  It is something that I threw together, and it turned out so beautifully, that I just have to share!


This is a dish of organic capellini (boiled), then tossed with lightly sauteed organic yellow squash, nonGMO canola, salt, fresh organic spinach, fresh diced tomato, organic red quinoa, & shredded aged cheese (can't remember name...something imported!).


This was the baby's plate...how pretty is that?!?  I didn't realize how pretty it looked, all plated up, until I was about to serve it.  I had to take a picture!  

This was delicious!  I don't know about you, but I believe summer calls for light and fresh pasta dishes.  This one's a keeper.
