Today I have to make a fresh batch of berry sauce.
Doesn't that look delicious? Trust me, it is! My kids love it, and we put it on waffles, yogurt, toast, & even pb 'n j sandwiches! This basically replaces high fructose corn syrup, since it's in syrups, jams, jellies, and everything else you can think of. This can be used on everything, so make a big batch! I'm especially looking forward to berry season...the freezer will be packed full of ripe delicious berries for this sauce! The batch above was made with some fresh organic blueberries & a bag of unsweetened frozen berries (strawberries, raspberries, blueberries) from my freezer.
This recipe is adapted from 100 Days of Real Food. Check them out. Lisa has been my inspiration for so many of our changes, a trailblazer of sorts, who took a lot of the guesswork out of making such a huge lifestyle change.
-1 c frozen berries (these can be fresh cut & frozen, or bought frozen)
-1/3 c water
-2 to 2 1/2 T honey (Another sweetener can be used, such as pure cane sugar or maple syrup, but the measurements may change, so give it a taste as you add them slowly.)
Toss it all into a saucepan, cooking until all ingredients are incorporated and the berries are soft...about 5-10 minutes.
Let it cool for a bit, then blend it (immersion, counter top, food processor). If your blender or food processor has a glass bowl/jar, then cooling isn't necessary.
Store in the fridge. I find that glass jars work the best. I keep glass jars from everything. :) Waste not, want not! I currently store my berry sauce in an old glass peanut butter jar. It works wonderfully. This will keep for a long time. I've had mine in there for a month, now.
