Pizza Night & My Homemade Dressing Recipe

Friday nights can get kind of busy around here, so I like to keep dinner simple (Hey!  That sounds like every other night, too!). Friday is pizza night.  Doesn't every family have a pizza night?  We did when I was growing up!  Every Thursday night we had pizza...frozen, delivery, some sort of homemade, but always pizza, and usually with fries.  

I do things just a bit differently, and the whole family loves it.  Every week I pick up 2 Great Harvest Bread Company whole wheat pizza crusts.  Man, what a great value at only $2.00 each, and they only have 5 ingredients, just like I would use at home! 

This past Friday I made 2 18" pizzas, each with fresh shredded mozzarella, Mid's sauce (Not organic, but our favorite!  It would be wonderful if they made organic!), 
& organic Italian seasoning.  One of them had organic spinach & red onion, as well.  We could do many toppings, but spinach and onion is a favorite.  We always pair our pizzas with a fresh salad made of artisan lettuces, organic cucumber, tomato, & my homemade dressing.   



Here is a pic of a previous pizza dinner.  The pizza pictured was made with a GH white crust (my hubby bought it; I only buy whole wheat).




This salad dressing is something my family can't live without.  Eating 30% of each meal raw means that salads come into play quite a bit.  Here is how I make my dressing...

-1/4 c apple cider vinegar  
-1/2 c oil (I use either nonGMO sunflower or nonGMO canola, but any could be used.)  
-All natural brown mustard (I've used spicy and champagne).  I don't measure...it just depends all on your taste.  I usually use around 4 T.
-2 cloves fresh garlic
-3 T fresh parsley
-1/2 t organic Italian seasoning
-1 T pure cane sugar

I throw all this in my Ninja chopper and give it a whir for a second or two, but before I had this, I chopped the garlic and parsley & added all of the ingredients to a cruet & just gave it a good shake.You can also use a food processor or a blender.
