This is what my kiddos took for lunch today.
The kids have different lunch containers today, because my 1st grader forgot his at school. Shouldn't I have back ups, spares? Yes, I should, and I would, if the kids hadn't also broken those this week. It's been a rough week for lunch containers around here!
Today, the kids had a salted baked potato, a cheese skewer, 1/2 a kiwi, a PB & Co packet, organic grape tomatoes (1st grader), edamame (K), & preservative free prunes (K).
I used the last of my corn tortillas this week, so I will be making more in the next couple of days. I knew that I had to make my own corn tortillas when I couldn't find any that were nonGMO verified or organic...at least not locally, and not at a reasonable price. Whole Foods & other large health food stores have them, but I'm a fan of making things myself. After all, if someone else can make it, so can I!
So, I went and bought myself a tortilla press. This is an inexpensive little gadget that I got at a kitchen store for less than $14. After some looking into this whole corn tortilla thing, I realized that my organic corn meal wasn't gonna cut it...I needed masa harina. Not just any masa harina, though. I needed a brand free of GMOs, so I was pretty excited when I found Bob's Red Mill Masa Harina locally, at Super K. Bob's Red Mill is committed to using only nonGMO seeds in all of their crops.
I used the recipe on the package, which only called for masa, water and salt. I'm not gonna lie...there is a learning curve involved in this. One thing I've learned since, cover the press in plastic wrap. As you can see, I didn't know this when I made the tortillas pictured below.
Then I cooked them up...
Yes, those are Christmas spoon rests. I see no reason to pack away a perfectly functional item just because it has a Christmas tree on it. Ok, that's not perfectly true. They are the only spoon rests that I have.
After cooking these babies, I placed them on baking sheets, in single layers, and froze them in batches. Once frozen, I transferred them to a freezer bag. Freezing them individually prevents sticking.
Honestly, these are so worth it! They are amazing! My family will never go back to those crunchy, crumby, genetically modified, store bought things. :)
